Pasta bake but a cake too? ๐Ÿฅฐ๐Ÿ˜ This chilly weather makes me unwilling to give up on pasta bakes. This is a timballo di pasta, a baked pasta cake that is popular in Sicily. It’s one of those wonderful recipes that uses up leftovers in the tastiest way. Swipe to see the slice pic!

This one is encased in roasted eggplant slices and baked in a bundt tin but you can bake these in round springform tins too. It’s a great way to use up any leftover bolognese sauce too! I used anelli ring pasta but other shapes work well too.
