It’s Panforte time! This Italian Christmas fruit and nut cake is one of my favourites to serve at Christmas. You can buy it but it’s even better made because you can use your favourite nuts and fruit-this one has chocolate in it which is quite common and adds a richness without taking away from the spiced fruit flavour.

It’s like a cousin of the English fruit cake except only takes 25 minutes in the oven and there’s no need for presoaking. It’s flatter and served in thin slices with coffee.

Like the fruit cake it can be baked a few weeks in advance so it’s great for Christmas day or to bring to a friend’s house as it is sturdy and doesn’t need refrigeration. Pretty much a perfect cake!
