Cheesecake but vanilla fudge and whisky flavoured? YES! This is one of my favourite cheesecakes EVER and it’s created for Christmas coming up. If you’ve got a whisky fan in your family or friendship group this cheesecake is for them. I used some Aberfeldy 12 year old whisky in this cheesecake as well as vanilla fudge.

Aberfeldy asked me to develop a recipe that would go with their whisky and I decided on this cheesecake to match. This gorgeously syrupy whisky is made in the Central Highlands of Scotland and has strong vanilla notes thanks to the longer fermentation process in oak barrels. It’s called the ‘Golden Dram’ as the water source is Pitilie Burn known for its water quality and its deposits of alluvial gold. It’s also a fantastic Christmas present for any whisky lover! Pair it with a honey highball as shown! The 12-year-old Single Malt Scotch Whiskey 700ml is $85.00 and available to purchase at Dan Murphy’s and independent retailers. You can thank me later 😉
